Notes
Hand-picked and fermented in open air fermenters.40-50% of fruit picked is cold soaked for around 4 days before fermenting of 12 days using natural yeast. The wine is then placed in 50-60% new Allier barrels by gravity. It is racked by gas after secondary fermentation, then again at 18 months before bottling.
