Grapes found in blend are Syrah 42% , Monastrell 28%, Garnatxa 10%, Pinot Noir 8%, Vermentino 8% and Counoise 4%. Whole bunch Shiraz left on skins to start wild ferment, before draining off to old oak; whole bunch carbonic Monastrell, Garnatxa and Counoise parcels pressed off to finish ferment in old barriques; whole bunch Pinot Noir - and a splash of Vermentino. The wine is unfined. Sulphur dioxide is added just before bottling.
